Domaine Lassarat et Fils

History: Born in a family of growers from Vergisson, Roger Lassarat created his own domaine in 1969 with about 3 hectares. With time, the domaine expanded and is now about 16 hectares.

The wines

When the harvest arrives in the cuverie, it is immediately put in a pneumatique press that will slowly and nicely extract the juice, respecting it on the mean time.
Then, after a light debourbage lasting one night, the fermentation start in a temperature controlled stainless steel cask for a part and in barrel for another part, always keeping quite cold temperature.
